There’s a few simple ingredients that just go well together, and I think that broccoli and pasta go amazing together. Broccoli pasta is one of those weeknight meals that just hits the spot: it’s quick to rustle up, it makes veggies delicious for fussy mouths and it’s great for leftovers! So, for those looking to up their greens and also have a lunch that will make your colleagues envious, I present my take on the Broccoli pasta.

Why is this one so good? I think it’s the simpleness of it that makes it just work. It’s under 10 ingredients as well, but it can be tailored to your taste. It’s another under 30-minute weeknight recipe. In fact, it’s under 20 minutes. In a real rush? This one is under 15 minutes. It takes 10-11 minutes and it is heavily dictated by your pasta cooking time!

What can I add to broccoli pasta?

SO MUCH can be added to this, it’s almost a meal wonderland! It can be a bit of a fridge clean out. For those looking to up their greens or iron – add some spinach or kale and wilt it through. If you want some punch, red chilli flakes or a fresh chilli. For a bit of salty umami flavour? Add a few anchovy fillets when frying off the onion and garlic. The choice is yours! If you have leftover meat then that would work too. Some chicken or bacon for those who think that no meal is a meal complete without a side of meat. 

Zing it up with a squeeze of lemon or use your soft herbs that are maybe on the turn. Any soft herbs would suit this such as parsley, coriander, basil, dill… 

Pasta, pasta, which is faster?

For broccoli pasta you are going to want a shorter pasta. Sorry, put the linguine back! It will ensure it’s a quick cook time (shorter pasta cooks quicker!) and it’s easy to mix everything in. 

Dear Diary, I mean dairy

There is a bit of dairy in this meal because it’s what gives it the sauce. I use two types of cheese: parmesan (of course!) and mozzarella – because it becomes so cheesy and is the base for the sauce. I also rely on a splash of cream to make it rich and filling. But, besides that, it’s an easy meal to knock up and it’s a real crowd pleaser: from the meat eaters down to the fussy ones, this ticks everyone’s box!

Broccoli pasta

Another weeknight pasta recipe for the time poor but the flavour lovers! Creamy, cheesy and a little bit healthy, it's broccoli pasta!
Prep Time: 5 minutes
Cook Time: 11 minutes
Servings: 3

Ingredients 

  • 3 tbsp olive oil
  • 2 garlic cloves, finely sliced
  • 1/2 brown onion, finely diced
  • 3 cups chicken or vegetable stock, 24oz
  • 1 cup heavy cream, 8oz
  • 1 broccoli , florets and stems, finely sliced
  • 300 g small pasta, 10oz
  • 60 g mozzarella, 2oz (grated)
  • 60 g parmesan, 2oz (grated)

Instructions 

  • In a large saucepan on a medium โ€“ high heat, bring the olive oil to heat and fry the garlic and onion for 3 minutes, while stirring often, until fragrant and translucent.
  • Add the stock, cream, broccoli and pasta to the pot and stir well. Bring the stock to the boil. Once boiling, reduce the heat to medium. Stirring occasionally, keep the water at a rapid boil for 8 minutes or until 80% of the liquid has been absorbed by the pasta and the pasta is cooked el dente.
  • Reduce the heat to low and stir through the mozzarella and parmesan until the sauce is silky. Serve immediately.

    Do you cook or steam the broccoli before frying?

      There is no need to as it will cook in the stock with the pasta!

      I always like to use a smaller pasta shape when making this recipe! Salmon or steak would be a delicious addition!
