These garlic butter mushrooms are oven roasted until golden brown and caramelised. They tossed through a homemade garlic butter, baked and then finished off with a big squeeze of lemon and some fresh herbs. While they make the perfect side dish to steaks and roast chicken, they are so delicious you may just want to serve them on their own!

Garlic butter mushrooms
These garlic butter mushrooms have become a new favourite recipe in my house! They are oven roasted to absolute perfection and filled with so much flavour. I absolutely love to cook mushrooms as they are such a versatile vegetable that can be roasted, stuffed, pan fried or even crumbed and deep fried. Sauteed mushrooms are another great option, offering a quick and flavorful side dish that pairs well with many meals. They are also full of umami rich flavour, making them the perfect vessel to so many different types of recipes.
Mushrooms come in all different shapes and sizes! I always like to use a mix of mushroom varieties in my recipes as they bring with them their own unique taste and texture. Shitake mushrooms have a chewy texture and very distinct taste while button mushrooms and cremini mushrooms are very sweet in flavour and more silky in texture. Any mushroom can be used in this recipe so it really just comes down to what you can get your hands on and which flavour and texture you are looking for. If you are using larger sized mushrooms, it’s important to note that more juices will fill at the bottom of the pan which will prevent caramelisation.
Ingredients needed for garlic butter mushrooms
Just like many of my recipes, very few ingredients are needed for this roasted mushroom recipe.
Mushrooms: Any mushroom can be used for this recipe but for that beautiful caramelisation I recommend using smaller mushrooms such as button, swiss brown or cremini mushrooms. If you are wanting larger mushrooms, turn to portobello mushrooms.
Garlic: We need lots of garlic for our garlic butter sauce! I have chosen to use garlic confit but this can always be replaced with 6 cloves of fresh raw garlic that has been finely minced.
Olive oil: I always encourage people to use a high quality extra virgin olive oil if they can!
Butter: Unsalted butter is needed for this recipe and is a key ingredient in our garlic butter sauce
Thyme: Thyme has a very strong flavour so only a small amount is needed. If you can’t get your hands on fresh thyme leaves, dried thyme will also work.
Parsley: Fresh parsley is used to garnish the dish at the end. It brings a lightness and freshness to a very rich and heavy dish
Lemon: A big squeeze of lemon cuts through the rich garlic butter sauce.
Salt and pepper: You need these essentials to bring out all the flavours in the dish
How to make garlic butter mushrooms
These oven roasted mushrooms are such an easy dish to make. Plan on spending 1 hour to roast the garlic and then 25 minutes to roast the mushrooms.
Garlic confit: Preheat the oven to 120 degrees Celsius / 250 degrees Farenheit. Submerge the garlic in olive oil and bake in a covered oven proof dish for 1 – 2 hours or until the garlic is golden and soft to touch.
Make the garlic butter: in a small pot on a low heat, add the garlic confit, butter and thyme. Mix through until well combine and the butter has melted. Alternatively, you can place everything into a microwave safe dish and microwave for 2 minutes, stirring at every 30 second interval.
Coat the mushrooms: In a large bowl, combine the garlic butter, mushrooms, and a pinch of salt and pepper. Then toss the mushrooms in the bowl until they are well coated in that delicious sauce!
Roast mushrooms: Spread the oven roasted mushrooms onto a baking tray and drizzle over the olive oil. Bake for 25 minutes, ensuring you do not toss or turn them.
Garnish: Remove from the oven and squeeze over the lemon juice. Finish off with a sprinkling of parsley.
How to clean mushrooms
It’s very simple to clean mushrooms! As some of them can come with a little excess dirt on their flesh, we do want to clean that off. Using a damp paper towel, very gently dab the mushrooms and remove as much of the dirt as possible. Try and avoid running them under cold water!
Nutritional Benefits of Garlic Butter Mushrooms
Mushrooms are not only delicious, but they also offer several nutritional benefits. Mushrooms are low in calories and rich in vitamins, minerals, and antioxidants. They are an excellent source of vitamin D, copper, and selenium, and contain a range of B vitamins, including riboflavin, niacin, and pantothenic acid.
Garlic, on the other hand, has antibacterial and antiviral properties, and contains compounds that have been shown to have anti-inflammatory and antioxidant effects. Butter, in moderation, provides a rich source of fat-soluble vitamins, including vitamins A, D, E, and K.
When combined, garlic butter mushrooms offer a nutrient-dense and flavorful side dish that can be enjoyed as part of a healthy diet. To make them even healthier, use unsalted butter and reduce the amount used, and add some fresh parsley or thyme for extra antioxidants.

Garlic butter mushrooms
Ingredients
Garlic confit
- 2 bulbs garlic
- 2 cups olive oil, extra virgin
Garlic butter mushrooms
- 20 garlic confit cloves, or 6 raw garlic cloves, finely minced
- 3 tbsp butter, 50g
- 1 tsp thyme
- 1 lb mushrooms, 500g
- 2 tbsp lemon juice
- 1 tbsp parsley, finely chopped
- salt and pepper
Instructions
Garlic confit
- Preheat the oven to 120°C/ 250°F
- Peel the garlic by breaking the cloves away and placing them into a heatproof bowl. Submerge in boiling hot water for 5 minutes and drain. The skin will become loose and easy to peel away.
- Place the garlic cloves into an ovenproof dish and fully submerge in olive oil. It's important the garlic is fully submerged in the olive oil so it does not burn. Bake for 2 hours or until the garlic has browned in colour.
Garlic butter mushrooms
- Preheat oven to 220°C/450°F (200°F fan)
- In a small pot on a low heat, add the garlic confit, butter and thyme. Mix through until well combine and the butter has melted. Alternatively, you can place everything into a microwave safe dish and microwave for 2 minutes, stirring at every 30 second interval.
- In a large bowl, combine the garlic butter, mushrooms and a pinch of salt and pepper. Using a wooden spoon, gently stir through until the mushrooms are well coated in the sauce.
- Spread the mushrooms onto a baking tray and drizzle over the olive oil. Bake for 25 minutes, ensuring you do not toss or turn them.
- Remove from the oven and squeeze over the lemon juice. Finish off with a sprinkling of parsley.
