Oh chicken noodle soup. Is there anything more comforting? It’s literally the title of a book Chicken Soup for the Soul – which is all about soothing and comfort. That’s because there is nothing like a hug in a mug – a big bowl of chicken noodle soup.

Chicken noodle soup
For this chicken noodle soup, my chicken stock recipe will be the base for it. All of the flavours that have been cooked out in it are the ideal base to build the soup on. You’re going to need carrots, celery, onion, garlic, fresh herbs, aromatics and of course, chicken bones.
There are a lot of healing properties associated with chicken noodle soup. It’s an old wive’s tale that chicken soup can boost your immunity. Well, it sounds like an old wive’s tale, doesn’t it? But it actually does have so many healthy and whole ingredients in it, it has been proven to boost one’s immune system – this is if you weren’t sure whether or not you wanted to make the soup! It’s a lifesaver!
Saving it
When it comes to making this soup, it’s good to know it freezes really well. So, if you can’t finish it off, don’t worry – pop it in the freezer and save it for another day you need the pick-me-up. If I am making a large batch that I know will go straight into the freezer, I tend to leave the pasta out and add it in when I reheat the soup. The pasta will swell and absorb most of your stock when reheated.
Because it keeps so well, you can also give it to your loved ones. If you have a friend who is down and out – chicken soup. Know someone who needs to take time of out of the kitchen, perhaps they’re ill or have just had a baby… chicken soup! The best gift! It’s flavourful, homemade and also – immune boosting.
All the veggies
Besides the stock, this soup is jam packed with veggies. I tend to use root vegetables like potato, carrot and celery. They are so hearty and can be cooked for long periods of time. It means that the soup is almost all veggies and chicken, meaning that it is low calorie, high in nutrients and you can have it with as much pasta to fill it out as you want!
Tips and tricks to nail chicken noodle soup
Although I’ve recommended that you use my stock, I know that time poor people might struggle with this during the week. So, if you need to – store bought stock is fine! The better quality will be best for it as it will be the broth.
If you don’t want to roast a whole chicken, you can buy one from the grocery shop and use that instead. Alternatively, you can cut up 500g of chicken thigh and toss that in before the pasta is cooked. It will need 10 minutes of cooking time in the stock.

Chicken noodle soup
Ingredients
- 1 tbsp olive oil
- 1 onion diced
- 1 carrot diced
- 1 celery stalk diced
- 2 garlic cloves crushed or sliced
- 2 potatoes peeled and finely cubed
- 6 cups chicken stock
- 3/4 cup stelline pasta
- 500 g roasted chicken meat 1.1lb
- 1 cup frozen peas
- 1 tbsp parsley finely chopped
- lemon
- salt + pepper
Instructions
- In a large pot on a medium – high heat, bring the olive oil to heat. Add the onion, carrot, celery and garlic to the pot and sauté for 5 minutes or until fragrant and the onion is translucent. Stir often. Add the potatoes to the pot and cook for an additional 2 minutes.
- Add the stock to the pot and bring to the boil. Once boiling, reduce the heat and simmer for 15 minutes. Bring back to the boil, add the pasta and cook for 3 minutes or until the pasta is plump and al dente.
- Reduce the heat, add the peas, chicken and parsley to the pot and stir through. Squeeze over some lemon juice and season to taste. Serve immediately.
