Steak is already a rich meat but it also lends itself to other rich flavours. Lots of garlic and butter allow a really good quality piece of meat, such as New York strip steak or sirloin steak, to stand out and make a meal worth writing home about. I’ve been experimenting with different ways to prepare steak and these garlic butter steak bites are a great way to get creative with your dinner.
Garlic butter steak bites
So, what is a garlic butter steak bite? It’s something of a Daen’s Kitchen invention. I was inspired when partnering with Westgold Butter. I wanted to make something really rich and decadent that went with my Garlic Butter Mash Potato. Steak would suit it, or sausages, but how do I elevate it?
Cut it up smaller and cook it like it was going into a stew. Minced garlic is used in the recipe to create a rich and aromatic garlic butter sauce.
That’s what I ended up doing, and this really is a fun way to prepare the steak and I promise you it doesn’t affect the quality of the meat.
Introduction
Garlic butter steak bites are a mouth-watering and easy-to-make dish that’s perfect for any occasion. This recipe combines the richness of garlic butter with the tenderness of steak, creating a flavorful and satisfying meal. Whether you’re looking for a quick weeknight dinner or a special occasion dish, garlic butter steak bites are sure to impress. The succulent steak pieces, bathed in a luscious garlic butter sauce, make for an irresistible treat that will have everyone coming back for seconds. Plus, they’re incredibly versatile and can be paired with a variety of sides to suit your taste.
Create a crust
To make the steak taste great and not go tough you need to make sure you have one thing: heat! I recommend using a cast iron pan and making sure it gets really hot. This way you’ll get a caramelised crust on your steak and it will give it texture but keep it to the perfect temperature inside.
Butter, and more butter
I use a lot of butter for this recipe and that is for good reason! The butter creates the a sauce that will drip all over the plate and you can mop it up with delicious bread or my Garlic Butter Mash Potato – which is what I recommend. Butter on butter, what could be tastier?!
Frequently Asked Questions

For my garlic butter steak bites I use rump steak. Rump steak is a big, juicy piece of meat. For my readers in America, this is also commonly known as flank steak in your neck of woods! Other great options for this recipe include strip steak and New York strip steak, both known for their tenderness and flavor. I also like to use a fatty cut of meat such as scotch fillet.
What sides do should I serve this with?
I like to serve these garlic butter steak bites with some mashed potatoes. You can opt for my garlic butter mashed potatoes or olive oil mashed potatoes. It would also great with some focaccia to mop up all the sauce, some green beans and a nice light salad.
Can I make the garlic butter?
You sure can! If you can’t get your hands on Westgold’s parsley and garlic butter you can indeed make your own. Follow my garlic butter recipe!
Common Mistakes
When making garlic butter steak bites, there are a few common mistakes to avoid:
- Overcrowding the pan: Cooking too many steak bites at once can lead to steaming instead of searing. Cook in batches if necessary to ensure each piece gets a proper sear.
- Not using enough oil: Using too little oil can cause the steak bites to stick to the pan. Make sure to use enough olive oil to coat the bottom of the pan, which helps in achieving a perfect sear.
- Not seasoning the steak: Seasoning the steak bites with salt, pepper, and garlic powder is essential for adding flavor. Don’t skimp on the seasoning; it makes a significant difference in the taste.
- Not using enough garlic: Always opt for fresh garlic to enhance the taste of your garlic butter steak bites. I also love to use my garlic confit as a replacement to fresh garlic. Just make sure you use double if not, triple the amount!
Cooking Techniques
To achieve perfectly cooked garlic butter steak bites, it’s essential to master a few key cooking techniques. Here are some tips to help you get started:
- Searing: Searing the steak bites is crucial for creating a crispy exterior and a juicy interior. Use a hot cast iron skillet or a stainless steel pan to achieve a nice sear. The high heat helps to caramelize the surface, locking in the flavors.
- Medium-high heat: Cooking the steak bites over medium-high heat helps to create a nice crust on the outside while keeping the inside tender. This balance ensures that your butter steak bites are both flavorful and juicy.
- Don’t overcook: Cook the steak bites to your desired level of doneness, but avoid overcooking, which can make the meat tough and dry. Aim for medium rare to keep the steak tender and juicy.
- Use a thermometer: Use a meat thermometer to ensure the steak bites are cooked to a safe internal temperature. This tool is especially helpful for achieving consistent results every time.
Storage and Reheating
To store and reheat garlic butter steak bites, follow these tips:
- Store in an airtight container: Store the cooked steak bites in an airtight container in the refrigerator for up to 3 days. This helps maintain their freshness and flavor.
- Reheat in a skillet: Reheat the steak bites in a skillet over medium heat, adding a little oil if necessary. This method helps retain their crispy exterior and juicy interior.
- Reheat in the microwave: Reheat the steak bites in the microwave for 10-15 seconds, or until warmed through. Be cautious not to overheat, as this can make the steak tough.
- Freeze for later: Freeze the cooked steak bites for up to 2 months. Simply thaw and reheat when needed, making them a convenient option for quick meals.
By following these tips and techniques, you can ensure that your garlic butter steak bites are always delicious, whether freshly made or reheated. Enjoy the rich flavors and tender texture of this delightful dish!

Ingredients
- 500 g rump steak 1lb cut into large cubes
- 100 g Westgold garlic and parsley butter 3.5oz
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 1/2 red onion finely sliced
- 1 tbsp Worcestershire sauce
- parsley finely chopped to serve
- salt + pepper
Instructions
- Bring the steak to room temperature.
- In a medium bowl, combine the steak, olive oil, garlic powder and generous amount of salt and pepper. Massage the seasoning and oil into the steak until the steak is well coated.
- In a cast iron pan on a medium – high heat, melt the garlic butter. Once the butter is melted and frothing, place the steak into the pan and sear on each side for 1 minute for medium rare or until cooked to your liking. The steak will form a beautiful crust. This step may need to be done in batches so you do not overcrowd the pan. Remove the steak from the pan and set to the side.
- Add the red onion to the pan and cook for 2 minutes, stirring consistently. Add the Worcestershire sauce to the pan and cook for 30 seconds.
- Add the steak back to the pan and stir through the sauce for 30 seconds. Take off the heat and stir through the parsley. Serve immediately with some fresh bread, salad or potato mash.
