Chicken wings are the ultimate bar food. Perfect for game day viewings, messy barbeques, kids and adults - chicken wings are a crowd pleaser. But I’ve decided to work with Westgold Butter to level these wings up! So, let me present to you, my garlic confit chicken wings with parmesan cheese.
Garlic confit chicken wings
It’s quite the mouthful - garlic confit butter parmesan chicken wings. But that’s because each of these ingredients is so essential to making this dish absolutely sing. It’s chicken wings but with a bit of a difference.
It's all about the butter
For this recipe, I need a really good quality butter. Westgold Butter is rich and decadent and the perfect ingredient to make a silky and smooth sauce to coat the wings perfectly. Tossing it in them will be the icing on the cake, or the sauce on the wings, to make a mind-blowing BBQ treat.
Making the perfect wings
There’s a few things you need for the perfect chicken wing, and one of them is baking powder. Why this? Because you need to create a crunch. Garlic confit chicken wings may be decadent but they also need that wing texture. And making sure they’re dried out in the fridge is the first step for crispy wings with baking powder being the second. It's important you don’t skip these steps!
Perfecting the sauce
What’s a garlic confit chicken wing without the garlic confit? There’s a few things to note about making this rich sauce. Once it’s foaming, you’ll need to add in parmesan. And this will make your sauce look like it’s broken but it’s not. Never fear! It will definitely come together once you add the sour cream and water.
Once you turn it down and add the sour cream, the sauce will start to come together in no time. Then, when the wings are done, toss, toss, toss them and make sure they’re nice and coated. From here, the only thing you’ll need is a napkin to wipe that delicious sauce off your face! Enjoy!

Garlic confit chicken wings
Ingredients
- 1.8 kg chicken wings, 4lbs
- 1 tablespoon baking powder
- 1 tablespoon sweet paprika
- 1 teaspoon onion powder
- 5 tablespoon Westgold salted butter, 70g
- ยฝ cup parmesan, grated
- 12 garlic confit cloves, or 4 raw garlic cloves, minced
- ยฝ cup sour cream
- 2 tablespoon parsley, finely diced
Instructions
- Do this step overnight. Place the chicken wings onto a rimmed baking tray and place into the fridge uncovered for 4 hours or ideally overnight.
- Preheat the oven to 250 F / 120 C.
- Remove the chicken wings from the fridge and line the bottom of the baking tray with alfoil. Spray the rack with oil to ensure the chicken does not stick.
- Place the chicken wings into a large bowl and sprinkle over the baking powder, sweet paprika, onion powder and generous amount of salt and pepper. Mix well with your hands until well combined.
- Place the chicken wings onto the wire rack. Donโt worry if they are touching and bake for 30 minutes.
- Turn the heat to 425 F / 220 C and bake for an additional 30 โ 40 minutes or until the wings are golden and crispy.
- While the wings bake, prepare the sauce. In a saucepan on a medium heat, melt the butter. Once foaming, drizzle with olive oil and add in the parmesan and garlic confit. Stir through with a wooden spoon, mashing up the garlic confit cloves with the back of the spoon. Your sauce will look like a broken sauce here but donโt worry, as it does come together!
- Turn the heat to low and stir through the sour cream with a splash of water. This is where the sauce will come together and become smooth and silky. Stir through until the sauce is nicely emulsified.
- Place the chicken wings into a bowl and toss through with all the sauce. Sprinkle with the fresh parsley, a crack of black pepper and extra parmesan. Serve immediately.
