Baked, roasted, fried. There are so many ways in which to cook a potato. For this recipe, we’re going to cut it really thin and stack it high into individual serves, like a potato dauphinoise. But these are my Garlic Butter Potato Stack. Although they might seem slightly fiddly, they’re worth the labour!
Garlic Butter Potato Stack
These crispy potato stacks are a delicious side dish that’s perfect for a dinner party or a fun twist on a simple potato dish. Not only are they are incredibly delicious, they are also quite pretty to look at! They look like little potato flowers that are almost too pretty to eat. The beautiful layering of potatoes make this recipe perfect for a fancy holiday dinner or a special occasion. They are a great alternative to regular mashed potatoes and crispy potatoes at the dinner table. They are filled with grated parmesan cheese, a delicious variation that adds a cheesy, golden brown crust to the dish. These garlic butter potato stacks are tender, buttery, and easy to prepare with simple ingredients.
Paper thin potatoes
Besides the ingredients needed for this dish, it requires one other thing: a very sharp blade! Whether it’s a sharp knife or a mandolin, it’s up to you. A mandolin is a kitchen tool used for slicing and cutting vegetables, fruits, and other foods with precision and uniformity. It typically consists of a flat, adjustable metal or plastic platform with sharp blades, and it’s often used to create thin, even slices or julienne cuts. But why do you need something so sharp? Because – these potato slices need to be paper thin! That’s how you make them stacked and get them crispy, creating those irresistible buttery potatoes. So thin they’re almost translucent. Once you’ve nailed this, you’re almost there with your Garlic Butter Potato Stack.
Homemade garlic butter
You should all know by now how much I love my garlic butter! I like to slather it onto so many recipes such as my garlic butter carrots, honey garlic butter lamb cutlets and even a garlic confit butter pasta! Making your own garlic butter is incredibly easy. All you need to do is combine butter, garlic and herbs of your choice such as thyme, rosemary, parsley or chives. You can always opt to use garlic confit over fresh raw garlic if you want to mix things up a little. While I like to combine all my ingredients in a little pot that is then placed onto the stove, you can also do this step in the microwave. Just make sure you are using a microwave safe dish.
Ingredients needed for garlic butter potato stacks
Below is a list of everything you are going to need to make these delicious garlic butter potato stacks.

Red potatoes: I like to use red potatoes not only for their waxy texture and creamy flesh but also for their beautiful red skin. This creates a very pretty look on your potato stacks. And for this reason, I always choose to not peel my potatoes. Not only does it save on time but it looks great as well!

Butter: We are obviously going to need butter for our homemade garlic butter! You can use either salted or unsalted butter here.

Garlic: I have used fresh garlic cloves to make this garlic butter but if you know me, I love my garlic confit. If you have a jar of this in the fridge, you can use this instead! Just make sure you double the amount of garlic being used as it has a very mild flavor when compared to raw garlic.

Thyme leaves: I always love to add fresh herbs to my garlic butter and have chosen to use thyme leaves in this recipe. You can replace these with any fresh herb you like such as rosemary, parsley or chives or simply leave them out for a more mild flavor.

Olive oil: This is just for a little drizzle at the very end as I find it stops the butter from burning and gives those potatoes their golden colour and crunchy texture. Use extra virgin olive oil if you can!

Parmesan: We all love a bit of cheese with our potatoes so I couldn’t resist in adding parmesan to this recipe. It creates a cheesy crust and an extra layer of flavor.
Serving and Pairing
If you are looking for a little extra something with these garlic butter potato stacks, you can add toppings of your choice such as sour cream, cheese, or chives. Even some crispy bacon would go down a treat! They’re great side dish for a dinner party or special occasion. Try pairing the potato stacks with a roasted chicken or lamb for a complete meal.
Save on time
I wanted to share this little hack on how to prepare these garlic butter potato stacks the day before! Without beating around the bush, they are a little time consuming to make. To save on time, I like to slice my potatoes and coat them in garlic butter the day before. When I am ready to serve them, all I have to do is assemble them into their stacks and bake! It’s that easy!

Garlic Butter Potato Stack
Ingredients
- 2.2 lbs red potato 1kg
- 6 tbsp butter 75g
- 6 garlic cloves minced
- 2 tbsp thyme leaves
- 1 tbsp olive oil
- 50 g parmesan grated
- salt + pepper
Instructions
- Preheat the oven to 350 F / 180 C degrees
- In a small pot on a low heat, combine the butter, garlic and 1 tablespoon thyme leaves. Cook for several minutes while continuing to stir until melted.
- Using a mandolin or very sharp knife, slice the potatoes into very thin circle shapes. We want them to be paper thin!
- Place into a large bowl and pour over the garlic butter. Season the potatoes with a generous amount of salt and pepper. Massage the garlic butter into the potatoes or until it’s well distributed across all potatoes.
- Pre line two large baking sheet with baking paper. Begin to assemble your potato flowers by placing the larger potato slices at the bottom into a circle shape that is roughly 10cm in diameter. With every layer, bring the potatoes in by an inch until they are stacked into a pretty almost flower like shape. This recipe will make roughly 12 potato stacks distributed across the two baking sheets. Sprinkle over 1 tablespoon of thyme leaves and grate over the parmesan. Drizzle over the olive oil and bake for 45 – 50 minutes or until the potatoes are golden and crispy.
- Finish off with an extra sprinkling of parmesan. Serve immediately.
