It’s the best time of the year!

Christmas has always been one of my favourite times of the year! Not just for the celebrations, but for all the cooking that comes with it. There’s something so special about gathering everyone around a table filled with food you’ve spent the day preparing, the smell of garlic and olive oil filling the air, and the sound of laughter and clinking glasses in the background.

Here in Australia, our Christmas looks a little different from the snowy scenes you see in movies. It’s hot, sunny, and the perfect excuse to cook outdoors or gather around a long table in the backyard. Because of that, I naturally lean toward lighter, fresher dishes. My mum even has a “no oven” rule on Christmas Day because it can get so hot! We plan our meal around lots of seafood, salads, and olive oil-drenched sides that celebrate the season without weighing you down. Think garlic butter pipis, BBQ prawns grilled with lemon and herbs, and big platters of chilled seafood with homemade sauces.

And no Christmas dinner of mine is complete without my homemade no-knead focaccia! This always get’s eaten straight away with absolutely no left-overs in sight.
